Memorial day office pot luck

The reason for the recipes on the blog is we had a Memorial day office pot luck on Friday, and I offered my blog as a way to share recipes. My personal favorite was the “Million Dollar Pie” it was good. All the food was great and I love office Pot lucks.

Summer Holidays Jello Dessert

Cherry or Strawberry Jello (lg box)
Pineapple or Lemon Jello (lg Box)
Blueberry Jello (lg Box)
8oz of softened cream cheese
STEP ONE:
Boil 2 cups of water
Mix with Cherry Jello
Then add in 2 cups cold water
Pour into mold. Let sit till firm
At least four hours.
STEP TWO:
Next take the lemon Jello
Mix with 1 ½ cups boiling water
add softened cream cheese
add 1 ½ cups cold water
user mixer to blend all together
pour over cherry layer
and let sit till firm. At least
4 hours.
STEP THREE
Now repeat step one using the blueberry
Jello. Pour over Lemon mixture
Let sit till firm at least 4hrs

Broccoli Cole Slaw

Broccoli Cole Slaw

1 bag (3-ounce) Ramen Noodle Soup in Oriental (other flavors will work, too)
1/4 stick butter
1/2 cup slivered almonds
2 bags (12-ounce) bags broccoli cole slaw (in the bagged salad section of the grocery store)
Chopped green onions, for garnish

Dressing Mix:
3/4 cup canola oil
1/4 cup brown sugar
1/4 cup red wine vinegar
1 ramen noodle seasoning packet

Put the ramen noodles in a bag and crush them with a rolling pin while melting butter in a large skillet over low/medium heat. Add the crushed noodles and slivered almonds to the skillet and saute, stirring occasionally (keep temperature at low/medium heat) until nicely toasted. Meanwhile, whisk together all the dressing ingredients in a small bowl. Place the shredded broccoli into bowl and toss with the noodles and almonds. Pour dressing over salad and toss to coat. Garnish with chopped green onions. Enjoy!

Million Dollar Pie

1 small Cool Whip
1 can sweetened condensed milk
1 small can crushed pineapple
1 cup chopped pecans
the juice of one lemon
graham cracker pie crust

Mix Cool Whip, milk, pineapple in bowl until blended. Add pecans. Add lemon juice and mix until mixture begins to thicken. Pour into prepared graham cracker pie crust and refrigerate overnight.

Hint: you can stretch the mixture easily into 2 pies if you use a medium size Cool Whip and 15 oz can of pineapple.

Step Chart 28.9 miles

Here is my step counter from the Asheville YMCA as of (8pm on 5-19-08)
I rocked on (5-11) & (5-13) with over 10,000 steps!

I have recently just got in to walking / running and counting my steps and I love it!, just last week I met my first goal of 10,000 steps in a day! I was so excited that I have pushed my self to hard and ended up injuring myself and had to take a few days off my feet. This was very disappointing, because the week before I found myself parking at the far end of the ingles parking lot to get in a few extra steps on my pedometer.
Today was my 1st day back in the Gym and I only logged about 3,000 steps, 7,000 less then I would have liked.
Tomorrow is a new day, and I will get back to my 10,000 steps!

All was good until today, and now my foot really hurts!
however, I did meet my 10,000 step goal on Sunday and Tuesday!

so now my foot hurts!

8500 steps


I just ran 2.5 miles, and then some walking with a little more running and covered 3.5 miles in about 50 mins. (8,500 steps)

My goal is to run the full 3.5 miles for my 5K run on June 6th for the Asheville Chamber challenge.
If I keep this up, I might consider the Asheville Citizen Times 1/2 Marathon (14 miles?)

4000 step a day

With my new YMCA stepper, I'm AVG 4,000 step a day! it is really cool to see how many steps I do a day at the office. best part is I get points with the Y for free stuff, I log my steps with the BCBS 1,000,000 step program for contest to win an IPOD or a tent!

Next is the YMCA step program where I need to AVG 10,000 steps a day!

"My wife and I joined the YMCA in December of 2007, and as mush as we enjoy going three to four days a week to our local YMCA, my 4-year old daughter loves the Y more then we do. I’m not sure what keeps us coming back, to lose weight, get in shape, or because our 4-year-old demands it."
