The Best Hike Ever



Saturday, April & I hiked Cold Mountain a 10 mile hike, 5.1 miles to the top, and then 5.1 miles back. It was awesome, in the photo you can see the peek of Cold Mtn from a web cam photo.

We started on the tail at 10:15am, and reached the top around 1:30pm, and then stopped for lunch at the Cow Pasteur on the way back down! (The cow Pasture was a level spot on the 3 mile mark where cows used to graze. how the cows got there was Beyond me) anyway we made it back to the car just before 5pm. so about 6 and 1/2 hours of a trip once you add stopping for lunch, and photos.

we got some great photos, and survived some crazy chip monks on the way, the bugs at the top we what did us in, and once we reached the top and got a few photos we turned around and headed back to a clearing for lunch. We even came across a butter fly tree, and one butter fly landed right on my shirt. check out the photos from the hike.

The ICE-CREAM man is alive

"It is the Best Ice Cream Ever"

It was too cool, literally! We had a Ice-cream truck go through our neighborhood tonight, and we all bought Ice Cream, who could resist. I haven’t seen an Ice cream truck since I was little in the Bahamas.

Abbey got a Dora the Explore pop and I went with big chocolate chip cookie, and April made us sit outside so we could not make a mess in the house.

The 50 mile mark


Since the YMCA Step challenge started on May 19th, I have walked over 50 miles with my stepper in the past 20 days. I would have hoped I would have done better, I would have liked to have been at 60 miles! Now, I was on vacation in the Bahamas for 10 of the days so I did slack off a little, and then made up the difference when I came back to Asheville and ran a 5K.
My new goal is to try to make up the difference, and by June 19Th (30 days from when I stared)

I want to be at or above 90 miles total. to do that I will need to cover 4 miles a day? It's good to have goals!

Asheville Chamber 5K on Firday


Yesterday, April & I ran A 5K (3.2 miles) Asheville Chamber run in about 40 mins, in 93 to 95 degree temp. It was hot! and we did not expect such a hilly course, but I did better then I thought I would.


I expected it would have taken > 45 mins, so I was happy to do it in 40 mins, with the high temp, and all the hills. Abbey was in the stands to cheer us on. We had so much fun we are talking about doing our next 5K in Weaverville July 4th, and may be working toward an, 8K and maybe a 1/2 Marathon in September.
I placed 458th and ran it in 40:40
April placed 463rd and ran it in 41:12

I'm back from Vacation

I just got back from 10 day vacation in the Bahamas and It was awesome!
The only problem is getting ready fro this 5K run in 3 days.

5K Run in Asheville this Friday

I really excited, this Friday My wife & I are doing a 5K run in Asheville, NC. I did a 5K when I was 12, and she has never done one. Wish us luck!

It might be a nice 5K walk through Historic Asheville at this point! I can't cram for a 5K like cramming for a test the night before, I don't think I'm prepared for this.

MEDITERANIAN PASTA SALAD

INGEDIENTS:

Tri Color Rotini 1 box
Scallions pencil size, 6+ some green – mince
Black Olives- ½ cup – finely chopped
Fresh Oregano- 1 heaping tsp finely chopped
Granulated garlic ½ tsp
Mrs. Dashes Original 1 tsp
Pizza & Pasta spice( Spice Islands grinder) 1 tsp
Black Pepper ( grinder) to taste
Italian flavored bread crumbs
Parmesan cheese- to taste
Pinot Grigio white- 1/ cup
Helmans Mayo ½ cup
Rice Wine Vinegar- splash to taste

In Large mixing bowl, pour white wine and vinegar
add scallions, oregano,dashes,olives,pasta spice,blk. pepper

Boil pasta to al dente. Rinse cold & drain.
add mayo to bowl (wine and herbs) and mix.
add pasta & gently mix to coat.

Pasta mixture will be soupy. Add some bread crumbs, Caution
less is more… 1 or 2 tbs. At most. Toss & let rest in fridge. Check
in 20-30 min. If too loose add more crumbs, if too tight, oh well.
Sprinkle parmesan, toss in, cover and put in fridge.
